Spinach risotto - Spanakoriso

Ingredients
  • 1 ½ kilo fresh or frozen spinach
  • 5 fresh green onions
  • 1 grated onion
  • ¼ cup dill 
  • 1 cup grated fresh tomatoes or canned
  • 1 cup extra virgin olive oil
  • ½ cup warm water
  • ½ cup rice 
  • juice of 1 lemon
Serves 4-6

Preparation​​

  1. Wash and cut the spinach (fresh) and add to boiling water for 5 min. Drain. 
  2. In a saucepan add the oil, both types of onion and sauté lightly.
  3. Add tomato, salt, pepper, dill, spinach and water and mix well. 
  4. Add the rice, stir well, cover and let simmer for 20 min. 
  5. Add the lemon juice, let stand for 10 min before serving.
  6. In this dish the spinach can be substituted with lentil, fresh tomatoes or leek.
